Laurelle made this Pinakbet with the eggplant and tomatoes from her Kaukau 4 Keiki box. She shares, “although I am Filipino, I sadly didn’t grow up eating much Filipino food. However, my husband did. I often ask my mom (who is a great Filipino cook) how to make certain dishes for my family to enjoy. I would tell her what vegetables I have, and she would know exactly what I can make. This dish was so tasty and surprisingly easy and versatile.”

Easy Pinakbet by Laurelle Riola-Catbagan
Ingredients:
- 1/2 Onion, sliced
- 1 large Tomato (or several smaller), cut in wedges
- 4 cloves Garlic, chopped
- 1 can Chicken broth
- 1 tbs Fish sauce
- 1 cup Roast pork, cut up in smaller pieces
- 1/3 cup Dried shrimp
- 4 purple long Eggplant, cut into 1 inch pieces
Instructions:
- Sauté the chopped onion and garlic in a pan with a tiny bit of oil.
- Add the roast pork and stir fry for a couple minutes.
- Add the fish sauce, shrimp, tomato, and chicken broth to the pan. Let everything simmer for a few minutes.
- Add the eggplant and simmer for another 4 minutes or so or until the vegetables are tender.
- Serve over hot rice.
