Easy Papaya Popsicles by Julia Matseshe of Waimea

These Easy Papaya Popsicles were an experiment with the ultimate outcome – happy kids asking for more! Raised in Waimea Valley, Julia Matseshe loves cooking with locally grown food. She is a stay-at-home mom and website builder so she loves making food that is easy, quick, and keiki-friendly. So far, the Kaukau 4 Keiki boxes have been loaded with papaya and there’s only so many papaya-yogurt-granola boats a kid can eat week after week. As a great breakfast alternative (popsicles for breakfast!!) this recipe transforms this seasonal fruit into a perfect-for-summer treat that’s guilt-free and exquisitely chilly!

If you don’t have popsicle molds, no worries! A regular ice cube tray works great and it’s the perfect portion size for smaller keiki. As for the recipe, there are no rules here, just go for it! Play with the ratios according to your tastes. Use extra lime juice if you want some added tang. Or swap out different spices to mix it up. And save your popsicle sticks for some fun building activities. This recipe is so simple even the kids can help make it. Have them scoop out the seeds, squeeze the limes, and push the button on the blender. They’ll be so excited to eat these popsicles once they’re frozen so be sure to make plenty!

Easy Papaya Popsicles by Julia Matseshe

Ingredients:

  • Papaya, sliced and seeded
  • Lime, juiced
  • Cinnamon

Instructions:

  1. Slice your papaya, remove seeds, and scoop out meat into a blender.
  2. Squeeze your lime juice into the blender and add your cinnamon.
  3. Blend until smooth.
  4. Pour into popsicle molds, freeze until firm and enjoy.
