Pineapple Salsa

image_2 Pineapple. Salsa. Marriage. Pineapple has the acidity and the sweetness to take on spice. And lots of it. Depending on your tastes, anything goes. This here salsa was a dish prepared from a beautiful pineapple harvested from our garden the same day. No sitting around for this beaut. She had to make a presentation. Thoroughly relished at a dinner party with a Mexican theme. Enjoy.

Mix Everything below. Allow to sit to let the flavors gel:

  • 1 whole medium sized pineapple
  • 1/2 red onion or 3 medium shallots
  • 1 carrot, peeled and chopped (I did matchstix then cut cross wise so they look like small boxes) This could be replaced with bell pepper and be lovely.
  • 3 Tbps apple cider vinegar
  • 2 banana peppers – or other local chili
  • 1 Tbsp cumin powder
  • juice of 1 lemon
  • juice of 1 lime
  • 1 handful mint, chopped
  • sea salt, to taste

Garnish: 1 avocado cut in chunks. Slices of lime.
