Pineapple. Salsa. Marriage. Pineapple has the acidity and the sweetness to take on spice. And lots of it. Depending on your tastes, anything goes. This here salsa was a dish prepared from a beautiful pineapple harvested from our garden the same day. No sitting around for this beaut. She had to make a presentation. Thoroughly relished at a dinner party with a Mexican theme. Enjoy.
Mix Everything below. Allow to sit to let the flavors gel:
- 1 whole medium sized pineapple
- 1/2 red onion or 3 medium shallots
- 1 carrot, peeled and chopped (I did matchstix then cut cross wise so they look like small boxes) This could be replaced with bell pepper and be lovely.
- 3 Tbps apple cider vinegar
- 2 banana peppers – or other local chili
- 1 Tbsp cumin powder
- juice of 1 lemon
- juice of 1 lime
- 1 handful mint, chopped
- sea salt, to taste
Garnish: 1 avocado cut in chunks. Slices of lime.
