This simple Veggie Spaghetti and Meatballs recipe is shared by Desiree Agadar using her Kaukau 4 Keiki produce and ground beef. Slipping veggies into a spaghetti dish is super easy and you can use all manner of vegetables that may not be listed below. With so much different produce at your fingertips, now is the perfect time to branch out and try new things. If you want to hide certain vegetables try chopping them extra small and after they’re sautéed they’re barely noticeable. For veggies that are well-loved, leave them chunky and visible.
Meanwhile, the pre-cooked ground beef takes one step off the to-do list and saves your kitchen from the added grease that meat creates while being cooked. Instead, simmer your meatballs in store-bought or homemade sauce and enjoy this comfort food classic in a fraction of the time it usually takes to make!
Veggie Spaghetti and Meatballs by Desiree Agadar
Ingredients:
From the Kaukau Box:
- Zucchini
- Tomatoes
- Ground beef
- Wheat Bread
From the Kitchen:
- Onions
- Garlic
- Basil
- Any marinara sauce
- Any type of pasta
Instructions:
1. Cook noodles as instructed on the package.
2. While noodles cook, heat oil in a large pot over medium heat. Sauté chopped garlic, zucchini, onions and tomatoes.
3. Using your pre-cooked ground beef, make mini meatballs and add to pot with marinara sauce, then let simmer for about 10 minutes.
4. Enjoy with slices of toasted, buttered wheat bread.
