[Kauai Fresh] Tomato Sauce

fullsizerender_2Kauai Fresh Farms is located on Kauai’s North Shore, situated behind our main highway and nestled beneath the Namahana Mountains. Several solar powered greenhouses birth hundreds and hundreds of pounds of hydroponically grown tomatoes, lettuce, kale and cucumbers every week. I attest to their flavor, beauty and robustness. Whenever Kauai Fresh produces more than they can sell, they give me a call to see if I’m able to disperse them amongst the community. I rarely ever say no, how could I? Why would I? An abundance of tomatoes is a canning and preservers dream.

This sauce was as simple as simple could be. If you grow tomatoes at home or if you’re inspired to buy a full flat of tomatoes either from the farmers market or Kauai Fresh (just call me!) you could have this delicious sauce at your disposal all throughout the year.

Here’s how it goes:

Roughly 20 tomatoes (~5 lbs), stems removed and cut into large chunksfullsizerender

Place in a wide, high rimmed sauce pan and set the heat to medium high, once it comes to a boil (the tomatoes will cook in their own juices) reduce the heat to medium-low and add,

a large dash of salt, fresh black pepper

1/3 cup balsamic vinegar

1/2 cup coconut sugar

3 cloves chopped garlic

Allow to simmer for about an hour and a half. You can decide how “jammy” you want your sauce. I like to go for something a bit thicker so I like to reduce the tomatoes down a bit which means I need to have the stove going for a while (good time for chores or a good book). Don’t forget to stir – and more frequently as the tomatoes reduce! Enjoy over pasta, potatoes, mixed into rice, added to taro burgers, on toast. Anything goes 🙂
