Try this homestyle version of Hukilau Lanai’s famous veggie lasagne recipe. Hukilau Lanai chef and owner, Ron Miller, is a huge fan of fresh, local ingredients and has been shopping at farmers markets since the restaurant first opened 18 years ago. This mainstay menu item uses all the best seasonal produce farmers have to offer and the best thing is you can use whatever veggies you have in your kitchen! Hukilau Lanai’s Famous Veggie Lasagne
(Homestyle Version)
Ingredients:
- 1 box Lasagne Noodles
- 5 pounds Vegetables
- 1 jar Tomato sauce, about 22 ounces
- 2 ½ cups Mozzarella cheese
- ¼ cup Parmesan cheese
Instructions:
- Prepare the vegetables. Wash and peel carrots, beets, squash or any vegetables that you want to use. Chop them as uniform as possible into bite size pieces.
- In a large pan cook the veggies in a little bit of oil (or steam) them for about 8 to 10 minutes.
- When your veggies are almost cooked through, add any soft vegetables that you like such as chard or kale and turn off the heat. The residual heat will finish cooking the leafy greens. Season the vegetables with a little bit of salt and pepper. Drain any excess liquid from the cooked veggies.
- Cook the Lasagne noodles according to the instructions on the box and run them under cool water to stop the cooking. Drain them thoroughly.
- Assemble the lasagne. Spray a 13 x 9 pan with non-stick spray. Assemble the ingredients in the order that they are listed above. Cover lasagne with foil. Bake at 325˚ for 1 hour. Cool completely before cutting.
