Scratch Beef Stew

Beef Stew is a staple in Hawaii and hawaiian cuisine. Who doesn’t like meat and potatoes in a savory sauce?! Kristine and Sky’s favorite is a bowl of medium size beef stew with a side of poi at Dani’s restaurant in Lihue but if they can’t make it in, they make some at home.

Scratch Beef Stew

Ingredients:

From your Kaukau 4 Keiki Box:
•3 Tomatoes 
•3 Purple sweet potatoes, cut into bite size pieces 
•5 small Carrots, cut into bite size pieces 
•3 Beef burger patties 
•Poi (if need to thicken sauce) 

From your Kitchen: 
•3 Garlic cloves, minced 
•1/2 Onion, diced 
•Hawaiian salt 
•Ground Black pepper
•1 tsp Garlic powder
•1 tsp Onion powder 
•1 tbsp cooking Oil (olive or macnut)
•1 cup Water 
•2 tbsp Soy sauce 

Instructions:

  1. Cut your carrots and potatoes into squares. Set aside in a bowl. 
  2. In a blender, purée your tomatoes, a pinch of Hawaiian salt, a pinch of black pepper, and 1 cup water. Set aside. 
  3. In the pot, 1 tbsp olive oil to reheat and brown your burger patties. Set aside to cool and then cut into squares or bite size pieces
  4. Using the same oil in the pot, sauté your garlic until light brown, add onions and cook until transparent. Add your blended tomato purée and soy sauce. Keep mixing and let it simmer for 5 min. You can add more water if it starts to thicken. 
  5. Add your carrots and potatoes. Add garlic and onion powder. Cover with lid and simmer for 3 min. 
  6. Add your squared bite size burger patties to the pot and mix. Add water if needed. Thicken sauce with poi if it’s too watery. Season to taste.
  7. Serve this 3 ways:
    •with a bowl of steamed rice
    •with a bowl of poi  (or)
    •with a couple of slices of bread from your Kaukau 4 Keiki box
