CSA Winter Citrus & Long Bean Salad Recipe

Have you been seeing a lot of long green beans in your CSA bag lately? Need some inspiration and a fun healthy dish to make? Hereʻs an idea. Enjoy a mouth-watering Winter Citrus & Long Bean Salad made by Chef Bridget Kiefling. This is a perfect dish for your Ohana to quickly whip up for dinner!

Ingredients:

  • 1 bunch Long bean, cut into 2-inch pieces
  • 1 cup Bacon, chopped and cooked crispy
  • 1/2 Onion, julienned
  • 1 Red Bell Pepper, small dice
  • 3 ea Garlic clove, minced
  • 2 ea Orange
  • 2 Tbl Mustard (any except for yellow mustard)
  • 1/4 cup Apple Cider Vinegar
  • 1 cup Canola oil

Method:

  1. In a mixing bowl (or with blender/immersion blender) add mustard, apple cider vinegar, one garlic clove, and 1/2 cup of fresh orange juice (from one of your oranges). Whisk for approx 3-4 min to get ingredients to blend together. Slowly stream in canola oil while continuing to whisk to create your dressing. Season with salt and pepper to taste. Set aside.
  2. Using the other orange, trim peel and pith off revealing flesh of the fruit. Using a paring knife, carefully cut between each membrane separating the orange segments, into supremes. Reserve for plating.
  3. Heat a saute pan over medium to medium-high heat. Cook onions in a pan until blistered and slightly caramelized. Add bell pepper and continue to cook until the peppers are al dente. Next add long beans and garlic, cooking until beans are tender and garlic is fragrant. Remove from heat and toss in bacon. Season with salt and pepper to taste.
  4. Drizzle desired amount of dressing over vegetables along with your orange supremes. Taste!
  5. Serve and Enjoy!
