CSA Cooking Show: Green Tea Ice Cream Sandwich

Having a Green Tea Ice Cream Sandwich all to yourself means you no longer have to battle your friends for a slice of the pie! And we all know it wouldn’t be a true remake of a Kintaros night without a spin-off of their specialty dessert. Our version can be made dairy free and has a serving of veggies hidden inside. It’s also easier on the waistline and perfectly sweetened with apple banana and honey while being thick and creamy without needing an ice cream maker! 

It’s not the “real thing”, but it’s a great way to use up those endless racks of bananas we are blessed with year round. Keep in mind that green tea or matcha, which is green tea in powdered form, is very high in antioxidants and packed with natural caffeine so party accordingly but indulge wisely late at night. 

For the sandwich, we like using chocolate cookies which remind us of the ‘ono Oreo crust served at Kintaro! Feel free to customize yours with any of your favorite cookies. Make these in advance and have on hand in the freezer whenever the nostalgia hits for that long awaited bite of green tea pie.

Green Tea Ice Cream Sandwich

Ingredients:

Green Tea Ice Cream

  • 3 frozen Apple Bananas, ripe and peeled
  • 1 ½  C. Half and half, whipping cream, or 1 can Coconut Cream (dairy free version)
  • 1 packet or 1 Tbs. gelatin powder (this makes for creamier ice cream)
  • 4 Tbs. Honey
  • 1 tsp. Vanilla
  • 2 Tbs. Matcha Powder
  • Optional: 1 handful Kale or spinach, for color

Extras

  • Cookies of your choice for sandwich making
  • Caramel sauce, mini chocolate chips (optional)

Instructions:

  1. In a blender, mix together the match powder, gelatin powder, honey, vanilla, greens, coconut milk or half and half, and frozen bananas until smooth.
  2. Pour mixture into a container with a lid and freeze overnight or until solid. 
  3. Take out of freezer 10 minutes before serving so it can thaw.
  4. Take a big scoop of ice cream and sandwich it between two cookies. Freeze for later or enjoy immediately! Drizzle with caramel sauce or roll in mini chocolate chips if you’d like!
