Here is a super basic, surprisingly protein packed, yummy creamy sauce that is dairy free AND you can add to anything that needs sprucing. Ready?
- 1 package of firm Nori-Lite silken tofu
- juice of 2 lemons
- 1 – 2 garlic cloves depending on the size
- 1/2 Tbsp prepared dijon mustard
- 2 small bunches of cilantro, chopped (can substitute basil, dill etc – except use a bit less as their flavors are much stronger)
I use a quart size mason jar and my immersion blender for this, but if you need to use a standard blender it will do the trick. Add all ingredients and whiz away until all your ingredients have been incorporated. Enjoy over rice, potatoes, veggies, as a dip etc.
