As much as I love my veggies, I don’t always crave a salad or stir fry. I really love something simple, something indulgent with respect to my innate need for healthy food. So here comes a green spread. Something lovely I can spread on some local crusty bread alongside a mini glass of vino roso.
Here’s what I did:
- 2 sprigs of kale
- 2 sprigs parsley
- 2 sprigs dill
- 3 Tbsp capers
- 2 cloves garlic
- drizzle of olive oil
Add everything to your Cuisinart/food processor and blend until a nice spreadable-spread comes together. Adjust saltiness – I’m practicing using much less in my own cooking these days so I omitted, but do what you like from here. Spread over baguette or use as a crudite dip – carrots, celery, zucchini strips etc. Enjoy xo
