CSA Cooking Show: Taro Burger Sliders and Sweet Potato Fries

One day McD’s will get the memo and Hawai’i will have a taro burger and sweet potato fries in every location. Until then, we forge ahead creating the best homemade happy meals ever imagined with freshly sourced ingredients.

Dave’s Taro Burgers have been a mainstay on our online store for months and we love to see them claim a place in homes, both on the grill and in the pan. These taro burgers are overflowing with herbs and spices and level up any lettuce, tomato, onion combo you could create. Since MK treats bags were filled with a tub of Kaua’i feta this week we decided to follow the Greek inspiration and bring Kalo to the Med, so to speak.

And If you’re looking for bonus points and want to use up the last of this summer’s okra crop you can make these easy okra pickles to serve as a side. Enjoy this masterful meal with a frothy soursop cream soda and say goodbye to the classic combo for a while because these dishes are burger and a shake 2.0!

Taro Burger Sliders & Sweet Potato Fries

Tzatziki Sauce:

  • 1 C. Plain Greek Yogurt
  • 1 Cucumber, sliced
  • 2 Tbsp. Dill, fresh or dried
  • 2 cloves Garlic, minced
  • 1 Tbsp. Lemon juice
  • 2 Tbsp. Olive Oil
  • Salt and Pepper, to taste

Tzatziki Sauce Instructions:

  1. Using a cheese grater, shred the whole cucumber. No need to remove skin or seeds!
  2. Squeeze grated cucumber to remove as much water as you can.You can use your hands or a strainer for this step. 
  3. In a bowl combine your cucumber with the rest of your ingredients and chill in the fridge. 
  4. This sauce keeps for about 4 days.

Sweet Potato Fries Ingredients:

  • 2-3 medium Okinawan sweet potato
  • Frying oil, peanut or grapeseed work great
  • Pa’akai
  • For Dipping: Verde’s Chipotle Aioli **if your CSA pick up location is Lawai Market you’re in luck! They sell tubs of this delectable dipping sauce!!

Sweet Potato Fries Instructions:

  1. Scrub your potatoes well, dry them with a clean towel and slice them into medium sized fries. 
  2. Add oil to a large pan on medium heat.
  3. When your oil is hot, carefully add your fries to the pan. You want one nice layer with every fry in the oil. No overcrowding.
  4. Fry until golden brown, remove from heat onto a wire rack and salt while still hot.

Taro Burger Sliders Ingredients:

  • Dave’s Taro Burgers, cut in half
  • Focaccia, cut into slider size 
  • Kaua’i Kunana Feta
  • Lettuce
  • Cucumber
  • Tomatoes, sliced
  • Red onion, sliced into rings
  • Oil, coconut or olive oil work nicely

Taro Burger Sliders Instructions:

  1. Heat up a little oil in a frying pan then cook your taro burgers until they are slightly browned and crisp on the outside.
  2. Meanwhile, brush butter or oil on your buns and toast them in a pan until warm and light, golden, brown.
  3. Assemble your burgers — lay the bottom bun down, add your taro patty then top with lettuce, red onion, tomato, feta, and pour on a healthy serving of creamy tzatziki sauce. Yumm!
