Beef Chow Fun is a fundamental Cantonese stir-fry dish with tender and flavorful slices of beef, mustardy choy sum, and thick noodles that make it a simple weekday dish for the family.
We use our homemade teriyaki sauce to pack all of the flavor into this one pan meal. Use the veggies you have in season or on hand to make this a colorful and nutritious dish that will warm you from the inside out. Feel free to substitute the beef for pork or another protein such as tofu and as always, get creative with your vegetables. We’ve included a short list of additional favorites that could add extra fun to this savory noodle stir-fry.
Beef Chow Fun
Ingredients:
- 1 lb. steak (your choice of cut- look for fat marbling for tenderness)
- ½ cup carrot, grated
- 5 bunches choy sum, halved
- 1 cup MK’s Simple Teriyaki Sauce
- 2 Tbsp. corn starch
- 1 lb Chow fun or rice noodles
- Additional veggies: green onion, green beans, broccoli, cabbage, cilantro for garnish
Instructions:
- Slice your steak into thin strips. To make this easier you can place your steak into the freezer for 15 minutes to firm up first.
- Marinade with ½ cup teriyaki sauce for 15 minutes or longer to soak up flavor.
- Add 2 Tbsp.of cornstarch to your steak.
- Heat up a large pan or wok on medium high heat with a Tbsp. of oil.
- Fry your beef until crispy and browned then remove from the pan and set aside.
- Back into the hot pan add your noodles, ½ cup teriyaki sauce, and veggies. Using tongs or 2 large spoons, carefully stir fry for about 3 minutes being careful not to smash the noodles.
- Add the steak back into the pan and cook for an additional minute.
- Serve hot in bowls.
