Savory Ulu (breadfruit) Pancakes

The breadfruit tree is the super hero of fruit trees! A relative of the mulberry, this tree will bear up to 150-200 fruits per year with under 10 hours of energy input. That is a LOT of food for very minimal upkeep. As for nutrition, it is packed with energy, fiber, flavonoids (antioxidants), vitamin C, potassium, copper and a host of other vitamins and minerals. Savory Ulu Pancakes

  • Medium breadfruit/ulu chopped into large quarters (slice skin off carefully and cut around the inner core)
  • 2 Large pastured local eggs
  • 1/3 cup Organic Buckwheat Flour
  • 2 teaspoons baking powder
  • sprinkle sea salt
  • 1 stalk flowered garlic chive (use any garlic alternative, traditional chives will do nicely)
  • 1/4 teaspoon nutmeg (Use freshly grated if can. Nutmeg and it's outer shell, mace, grow here on Kauai!)
  • coconut, butter or cooking spray (for coating your pan)


Step 1
Carefully skin your ulu. Chop the fruit away from it's inner core and cut into large quarters. Place in pot and discard the core.
Step 2
Boil in salted water for approximately 20 minutes or until tender.
Step 3
Allow to cool and place inside a Cuisinart or food processor along with the rest of the ingredients. Blend until well incorporated.

Heat a large heavy bottomed pan and coat with coconut oil. Butter works too as would a quality cooking spray (try Spectrum). Pancakes need ample space and time. Cut some fruit, sip some java, make a phone call....
Step 6
Once toasty on both sides, plate with savory additions like goat cheese, leftover tapenade and lovely greens like this Dragon's Tongue arugula. This will make a hefty batch so enjoy in good company - eat from one plate or divide amongst many.
