Pickled Radish Recipe – CSA Edition

Looking for a fun and delicious way to eat your CSA radishes? Try this Pickled Radish Recipe! Here’s a pickling recipe from Michelle Schmidt, one of our CSA members.

Radishes are a great source for Vitamins C and B2, and give us calcium and potassium, too.

Pickled Radish Recipe:

  • Thin slice radish
  • 1/2cup apple cider vinegar
  • 1tsp raw sugar 
  • 1 1/2tsp sea salt
  • Add everything to a quart mason jar.
  • Fill top of the jar with boiling water. Agitate and let sit til cool. Then place in fridge.

Michelle says, “We use our pickled radish as garnish for soups and salads or just eat them for a healthy snack right out of the jar. They keep up to two weeks in the fridge but they probably won’t last that long! Even the keiki love them!”
